- 8 tablespoons salted butter
- One 28- to 32-ounce bag of frozen shredded hash brown potatoes
- 1 medium onion, finely chopped
- 1/4 cup flour
- 1 cup milk
- 2 cups low-sodium chicken broth
- kosher salt and freshly ground black pepper
- 1 1/2 cups grated Monterey Jack cheese
- 1 cup sour cream
- 1/2 cup grated sharp cheddar
- 2 cups kettle-cooked potato chips
- 1/4 cup grated Parmesan
How to make Funeral Potatoes recipe :
- Heat the oven to 360 Fahrenheit. Now grease the baking dish with 1 tbsp ghee.
- Heat a large pan on medium heat, then put 6 tablespoons of butter in it.
- Now add onion and cook till it becomes soft.
- Sprinkle flour over the onions and mix. And cook it for 2 minutes.
- Mix milk slowly making sure there are no lumps.
- Now boil this mixture and cook it till it becomes thick, for about 3 minutes. Now turn off the heat, and stir Monterey jack, sour cream, and cheddar.
- Now add hash brown potatoes and mix well. Now pour this mixture into the baking dish.
- Melt butter in a small pan. Put potato chips and parmesan in a bowl and crush the chips.
- Now cover it with foil and bake it for 20 minutes. Afterward, remove the foil. and bake until the top is golden brown and about 15 minutes.
