– 8 tablespoons salted butter – One 28- to 32-ounce potatoes – 1 medium onion, finely chopped – 1/4 cup flour – 1 cup milk – 2 cups low-sodium chicken broth – kosher salt and freshly ground black pepper – 1 1/2 cups grated Monterey Jack cheese – 1 cup sour cream – 1/2 cup grated sharp cheddar – 2 cups kettle-cooked potato chips – 1/4 cup grated Parmesan

Heat the oven to 360 Fahrenheit. Now grease the baking dish with 1 tbsp ghee.

1. Heat a large pan on medium heat, then put 6 tablespoons of butter in it. 2. Now add onion and cook till it becomes soft.

Sprinkle flour over the onions and mix. And cook it for 2 mins. Mix milk slowly making sure there are no lumps

Now boil this mixture and cook it till it becomes thick, for about 3 minutes. Now turn off the heat, and stir Monterey jack, sour cream, and cheddar.

Now add hash brown potatoes and mix well. Now pour this mixture into the baking dish.

Melt butter in a small pan. Put potato chips and parmesan in a bowl and crush the chips.

Now cover it with foil and bake it for 20 minutes. Afterward, remove the foil. and bake until the top is golden brown and about 15 minutes.
