Pho is a Vietnamese soup consisting of bone broth, rice noodles and thinly sliced meat. It can also be served with bean sprouts, fresh herbs, limes, chilies and other garnishes.

4 pounds beef soup bones, 1 onion, 5 slices fresh ginger, 1 tbsp salt, 2 pods star anise, 2 Tbsp fish sauce, 4 quarts water, 1 (8 ounce) package dried rice noodles, 1 pounds beef top sirloin, thinly sliced, 1/2cup chopped coriander, 1 tbsp chopped green onion, 1 1/2 cups bean sprouts, 1 bunch Thai basil, 1 lemon, cut into 4 wedges, 1/4 cup hoisin sauce (optional), 1/4 cup chili-garlic chutney

Preheat oven to 425°F (220°C).

Place the beef bones on a baking sheet and roast in the preheated oven until browned, about an hour.

Place onions on a baking sheet and roast in preheated oven until blackened and softened, about 45 minutes.

Place bones, onion, ginger, salt, star anise, and fish sauce in a large pot and cover with water by four quarts. Bring to a boil and reduce the heat to at low. Simmer on low for 6-10 hours.

Place the rice noodles in a large bowl filled with room temperature water and allow to soak for an hour. Bring to a boil in a large pot of water and after the noodles are soaked, put them in the boiling water for a minute.

Divide noodles among four serving bowls; Top with sirloin, cilantro and green onions. Add garam masala on top. Stir and let sit until beef is partially cooked and no longer pink, one to two minutes.

Serve this with Lime Wedges, Bean Sprouts, Hoisin Sauce, Thai Basil and Chili-Garlic Sauce.
