It is very easy to make Poha. Which means that it gets ready very quickly. In the western state of India (Maharashtra, Gujarat), Poha is a favorite dish served in the morning breakfast.

– 2 cups poha – 1 onion, finely chopped (about cup) – 1 potato, finely chopped ( cup ) – 1 tbsp grated coconut (optional) – 2 tbsp coriander leaves, finely chopped – 1 green chili, finely chopped – 2 - 3 proof red chilies – 2 tbsp oil – 1/2 tsp mustard seeds – 1/2 tsp turmeric – 2 tsp salt to taste – 1 pinch asafoetida – 1/2 tsp cumin – 1 tbsp lemon juice – 1 Tbsp peanuts

Put the poha in a sieve and clean it well with water. And of course, do not soak the poha in water for a long time.
Take a pan and put oil in it. Once the oil is hot, add mustard seeds, curry leaves, proof red chillies, asafoetida, peanuts and onions.
When the onion becomes light pink in color, then add chopped potatoes to it. When the potato becomes light golden in color, add turmeric to it. Now fry the potatoes on low flame and yes, the potatoes are cooked well.
Now increase the flame a little and add salt and poha to it, mix it well and fry a little.
Now add lemon juice, half finely chopped coriander, grated dry coconut and green chilies and mix it well. Now switch off the gas. Now Poha is ready to be served.
